- 1 Fig "Bâtard" Loaf
- 3 Anjou pears
- 250 g white sugar
- 40 g butter
- ¼ cup pear juice
- ¼ cup grilled skinned hazelnuts
- 1 double cream brie cheese
- Fresh rosemary
- 50 g melted butter
- Coarse salt
- Peppercorns
Preparation steps
- Start by peeling, deseeding and quartering the pears.
- In a pan, caramelize the sugar to obtain a light caramel color.
- Once the sugar has caramelized, deglaze the sugar with the butter and pear juice.
- Add the pears to the deglazed sugar and caramelize the pears.
- Put the pears and caramel aside.
- Cut the stick into slices.
- Brush each slice with butter and toast them in a pan
- Alternate pears and brie slices on toast.
- Sprinkle with hazelnuts and place in the oven to warm and melt the cheese.
- Finish with coarse salt and pepper, and sprigs of fresh rosemary.
